Baked hot and fast so the top caramelises to near-burnt while the centre stays barely set. No crust, no gelatin, no shortcuts — just cream cheese, cream, eggs and sugar treated properly.
Best eaten at room temperature rather than fridge-cold. Available by the slice or whole.
